While Karl Benz was filing the patent for his first internal combustion vehicle and Rodin was creating the sculpture of his Thinker, a sweet aroma of Caffè Latte pervaded the air at number 11 of Zapatería street in central Pamplona. Every Saturday, master confectioner Claudio Lozano would take his old copper pan and mix just the right amount of milk, coffee and sugar, blending the mixture with loving care in order to prepare some soft coffee caramels with a unique flavour. Nothing has changed since then. Our caramels are still handcrafted, following the same recipe as the one used by master Lozano in 1886 to prepare his daughters’ favourite candies using nothing but the finest natural ingredients.  Directed at specialist channels, on sale in airports, petrol stations, gourmet shops and the gourmet section of supermarkets.

THE ONLY CELLAR-MATURED CARAMEL IN THE WORLD

Before being put on sale, our caramels are left to mature for three months in our cellar at a controlled temperature and humidity, giving them an exceptional, soft texture that is different from traditional toffees. This process characterises the flavour and texture of these caramels, making them unique.

OUR TRADITIONAL PROCESS

 

 


We add milk, sugar and just the right amount of coffee to the pan, with no additives or preservatives, and simmer.

 


We stir the mixture as it cooks, to get the desired flavour and texture.


Once ready, we spread the mixture out and leave it to cool.

 


Once cool, we knead by hand.


We cut our caramels one by one and brand them with our seal.


And we carefully wrap them in their paper.
